History
Tacos dorados are corn tortillas filled with chicken, potato or shredded beef, rolled or folded and fried until crisp. They are served topped with crema, fresh cheese, lettuce and salsa. The name shifts by region: when long and rolled they are called flautas across much of Mexico, and in the United States they became popular as taquitos.
Cultural Notes
Son comida de cenaduría, fonda y fiesta, y una de las formas más económicas de aprovechar tortillas del día anterior. En el occidente del país se sirven ahogados en salsa de jitomate, y en el noroeste se acompañan de repollo rallado y crema.
