History
The cemita is a bread from Puebla: round, with a sesame-crusted top, named after acemite, the bran flour. As a sandwich it is filled with breaded meat, shredded Oaxaca cheese, avocado, chipotle and pápalo, the herb that gives it its signature flavor. It is one of Mexico’s most recognizable tortas and the emblem of the cemita stands in Puebla’s markets.
Cultural Notes
