History
Carnitas are pork slow-cooked in its own lard, original to the state of Michoacán. The result is tender, juicy meat with a crispy outer layer. They are served on tortillas with onion, cilantro, and green or red salsa.

Quiroga, Michoacán, es considerada la capital de las carnitas y celebra cada año una feria dedicada a ellas. Se ordenan por partes — maciza, buche, cuerito, costilla — o surtidas. Son platillo clásico de los domingos, las plazas y las fiestas familiares.
