History

The burrito is a wheat flour tortilla rolled around a filling, native to northern Mexico, where flour tortillas replace corn ones. Its origin is usually attributed to Ciudad Juárez, Chihuahua, though the word already appears in an 1895 dictionary of Mexicanisms in reference to Guanajuato. In the United States it evolved into much larger, multi-filling versions such as San Francisco’s Mission-style burrito.

Cultural Notes

En el norte de México el burrito es comida de diario y se come de tamaño modesto, con un solo guisado: machaca, chile relleno, deshebrada o frijoles con queso. Las versiones gigantes con arroz, frijoles y varios rellenos son una evolución estadounidense.

Main Ingredients

tortilla de harina frijoles carne deshebrada o machaca queso chile salsa

Variants

Burrito de machaca (Sonora) Burrito percherón (Sonora) Burrito de chile relleno (Chihuahua) Burrito estilo Misión (San Francisco) Chimichanga
